Kobe beef

I have a big problem with these “Kobe Beef Sliders” restaurants sell because it’s not actual Kobe beef. Yes, it’s Waygu beef but there are absolutely no standards on the breeding, feeding and care of these cattle as opposed to how Kobe beef (same animals, strict rules) is regulated in Japan.

Even if it is Kobe beef, the money is in the marbling. Grind up Kobe, and you’re pretty much just getting regular hamburger. Maybe even 70/30.
