Tailgating (Let's Talk BBQ)

With Kick off just over a month away I was wondering what are the chances of the school letting me show up around midnight so i can Fire up the smoker and get a good ole pork shoulder going. I must admit i make a pretty mean Pulled Pork but, i need at least 8 to 9 hours to get it done right. Here’s How i do it with Hickory wood!

Cover shoulder in honey and dry rub

Dry Rub:

1/2 cup of Paparkia
1/2 cup Smoked Paparkia
1 cup Brown Sugar
Palm measurements of Garlic powder, Onion powder, Chili powder, cheyenne pepper, salt, pepper

Wrap in tin fold

Wait till temp gets to about 250 and through it on the grill!

After 4 hours or so i open the tin foil and add about a pint of the sauce and some dry rub

sauce (EASTERN ALL THE WAY!!) Pour into the tin foil after about 4 hours
apple cider
Red pepper
Salt
Pepper

Cook for another 4 or 5 hours till 190 internal temp! Then Voila! BBQ

The real magic is in the slaw i use with the pork. That i keep tight to the vest!

Sounds pretty damn good but I’d say the chances of the school letting you hang out all night are close to 0%.

Yup - they wouldnt let me into the lot 30 minutes early good luck trying to stay over night.

You might be able to in the silver RV lot though.

This is my biggest beef (no pun intended) with the tailgating procedures. I’d love to start smoking some pork in the wee hours on game days.

I don’t have the parking info handy but I thought there was going to be an overnight lot for people wanting to camp. Could work for overnight cooking as well but might be a pain to set up and then move to your space in the morning.

The handbook is here if you want to search it. I didn’t find any references to ā€œcampā€, ā€œtentā€, or ā€œsleepā€ in it. There’s one reference to ā€œnightā€, and that’s the first tailgating rule which says:

1. Vehicles must vacate designated tailgating parking lots by midnight before game day or be subject to towing.

The students are camping in the grassy areas along the brick walkway from the Union to the Stadium.

I doubt they’d look too highly upon an overnight smoker set up, though.
